William Kent 2aea869bfa [MKSHELLLINK] Remove mbstowcs #define (#9053) ...

As of Xcode 26.5, several identifiers, including mbstowcs, are
poisoned when -fshort-wchar is set. This causes compilation errors,
even though we redefine the function to our own implementation.
Correct this by using a function with a different name, in this case
mbstowcs16 (per HBelusca's comment).
